Lemongrass chicken and beef raisins

1 chicken cut into pieces

1/2 kilo of santan juice

15 sticks of lemongrass to blender.

3 thin slices of galanggal to blender

2 inches of ginger

1/2 kilo of red shallots or onions

1 bulb of garlic

250g of dried chili pastes

dessicated coconut paste

sour,salt,sugar to taste

2 tumeric leaves and lime leaves for garnish.



Saute onions and garlic until fragrant.Add in all the blended ingradients and fry again till a little bit dry.Then put in the chicken pieces,santan milk and soured dried assam.Lastly the salt and sugar to taste with the dessicated coconut paste to thicken the sauce.garnish with fragrant leaves.



BEEF RAISINS:

1/2 kg beef slices

3 big spoons of raisins

3 shallots or 1 big onion.Use blender.

1 little spoon of cumin

soya sauce.



Mix all these blended ingradients with the beef for 20 minutes.

Cook until dry and pour in some of the cooking oil.

garnish with fried crispy onions and raisins.
