Eggless cake

12 oz (350g) plain flour
2 pinches of salt
1/2 teaspoon mixed spice
6 oz (175 g) margarine
6 oz (175 g) granulated sugar
12 oz (350 g) mixed dried fruit
1/4 pint(150 ml) milk
1/4 pint (150 ml) water
2 tbsp (30 ml) vinegar
2 tsp (10 ml) bicarbonate of soda.

Set oven 170 deg c. Grease a 2 lb (900g) loaf tin.
Sift together the flour,salt and spices.Rub in the margarine then stir in the sugar and mixed fruit.
Mix together the milk,water,vinegar and soda and stir into the flour mixture.
Spoon into tin and level top.
Bake 1 3/4 hours then leave to cool in the tin.
